Allysian sources Colombian Arabica coffee that uses the process of lyophilisation/cryodessication, also known as “freeze-drying.” This technique differs from the largely used “spray-drying” process, using freezing and reduction of pressure in order to rapidly remove water. This allows quality and nutrient retention to be maximized.
